Winemaking

Overnight passage in a cool room Second selection of the grapes on a sorting table. Fermentation in open top of 500 litres barrels. Daily “pigeage”. Maceration for three weeks. Vertical press with a soft pressing. Aged for 14 months in 500 litres new and one year old French oak barrels.

Lively red cherry and black fruit flavours with a touch of classy oak. Young and fresh with the classic mineral character of the Priorat. Smooth and rich with great finesse, depth and class. Ageing potential for up to 20 years.

  • 60% Garnacha 25% Carignan, 10% Syrah and 5% Cabernet Sauvignon

Harvest

  • The harvest is manual using 15kg boxes.

Winemaking

At the winery overnight in a cool room followen by a second selection on the sorting table. Fermentation in stainless steel tanks of 2500 liters. Temperature controlled daily “pigeage”. Some of the Syrah is not destemmed. Maceration of two to three weeks. Vertical press with a soft pressing. Aged for 12 months in French oak barrels of 500 liters.

Tasting notes

  • Red wine ripe cherry color with bright violet rim denoting youth. Wild red fruit flavours and fine toasted oak. The entry is fresh, gourmand and elegant with the classic mineral touch of the Priorat. A long lingering finish rounds of the wine with freshness and elegance.

Winemaking

Second selection of the grapes on the selection table. Pressing. Fermentation in stainless steel tanks with controlled temperature and maceration for the Viognier. Fermented in French oak barrels with controlled temperature for Garnacha Blanca and Chenin Blanc. The wine is aged in stainless steel for 6 months. Light filtration before bottling. No ageing in oak.

Tasting notes

Pale gold colour with hints of green denoting youth. Clean and bright on the palate. Mineral and fresh reflecting the schistous soil with flavours of peaches, apricots and pears . Nice bright spicy finish.

Winemaking

Fermentation in 2,500 liter tanks controlling temperatures. Treatment of must with “pigeage” daily. Maceration of two weeks duration. Vertical soft pressing of the lies. Aged 7 months in second year French oak barrels of 500 liters.

Tasting notes

Intense dark red colour, blue trim, clean and bright. Primary aromas of red fruit and subtle touches of caramel. Notes of minerality with hints of vanilla and Mediterranean herbs. Fresh and broad on the palate, long finish, mineral aftertaste and fruity with Mediterranean spices (rosemary, lavender, …)

Winemaking

Once in the winery, a second grape selection is made. Vertical press with soft pressing. Fermentation in 1000 litre stainless steel tanks controlling the temperature. 6 months aging in stainless steel tank.

Tasting notes

Pale yellow white wine with green highlights that denotes youth. Clean and bright. Fresh in the mouth with great balance, showing refreshing hints of pears and yellow fruit including peaches and apricots. A touch of minerality on a bright long finish.

In the winery a second grapes selection is made. Fermentation is cool and expressly stoped before the end of the fermentation to get sugar.

Tasting notes

  • Red wine, purple color, clean, and with good training teardrop..

  •  Floral aromas, such as rose or violet and currant notes and almonds.

  •  On the palate it is fresh, elegant and velvety. It has a soft, long-haul, with bursts of red fruit and a nice wide end.

Appellation

  • Siurana

  • The Arbequina olives of the Priorat hills, within the Siurana denomination of origin, are exquisite and appreciated for their delicacy and harmony. Also when they are well cured they are excellent to eat as an appetizer.

Oilmaker

  • After harvesting the olives are washed, then cold pressed followed by centrifugation and light filtration. A process that prevents any temperature change and maintains the natural oil

Tasting Note

Aromatic, soft oil with a perfect balance between fruit and acidity. On the palate the oil has complex and harmonious flavors with wild herbs, artichoke, green apple and freshly cut almonds. on the finish a touch of bitterness gives a lively refreshing “kick”, a sure sign of quality.
